The color characteristics of appetizing tomatoes

(in English) People's interest in food has increased. Evaluation of food is influenced to an extent by its appearance, in addition to its taste and smell. In this study, we conducted a survey on visual factors which influence the appearance of tomatoes to look appetizing. In a preliminary survey, we determined the essential items and conducted a questionnaire survey to extract adjective rating scales to be used in the main survey. The results suggested that the factors closely related to the appetizing impression could be narrowed down to mainly the color and blemishes. In the main survey, we examined the color factors. We showed photographs of tomatoes to respondents and performed a subjective evaluation experiment. As a result, we verified that the appetizing impression of tomatoes is closely related to the saturation of the L*a*b* color system.
