Abstract (in Japanese) (See Japanese page)
(in English) Food perception involves crossmodal cognitive processes including not only gustation and olfaction but also vision and audition. For example, animal-looking food decoration is applied to several confection products. In the present study, we investigated how this kind of food decoration influences the food perception. For this goal, we made pictures of a chocolate and a Squid Sushi, which were decorated by various caricatures and photographs of human, animal, and symbolic faces. The results showed that (1) the decoration on Squid Sushi drastically decreased the food likability, (2) the pictures of food decorated by caricatures led to relatively higher likability than the foods decorated by photographs, and (3) animal faces were better than symbolic faces as a food decoration, and (4) facial expression also influenced the food likability. These results would highlight a novel aspect of crossmodal food perception as well as provide a useful constraint on developing food products with visual decoration.
