Attempts to improve the perceived texture of nursing care foods using pseudo-chewing sounds -- The influence of food/sound congruity --

(in English) To improve the perceived texture of foods provided during nursing care, we developed a system to vary perceived food texture using pseudo-chewing sounds generated by electromyogram signals. It was confirmed that nursing care foods were perceived as stiffer with the presentation of this pseudo-chewing sound. However, unnatural food/sound combinations caused individuals to feel uncomfortable with pseudo-chewing sounds. In this study, we investigated the relationship between food/sound congruity and the effects of chewing sounds. Six pseudo-chewing sounds with different levels of congruity were tested. We found that the more natural food/sound combinations resulted in larger chewing sounds effects. It was concluded that reducing food/sound incongruity was effective to enhance the effects of pseudo-chewing sounds.
