| (in English) | We investigated the extraction of sugar from hibiscus seeds with stirring and ultrasonic irradiation (26 kHz, 78 kHz, 130 kHz) methods. In the aqueous extract, sucrose, fructose and glucose were confirmed by a high performance liquid chromatograph. For the extraction of sucrose, a stirring method was more effective than an ultrasound one. In ultrasonic extraction, the order of the maximum amount of extracted sucrose was in the order of 78 kHz > 130 kHz > 26 kHz. It was also found that an enzymatic reaction occurred in water: sucrose was converted into fructose and glucose during standing time. | |
