Simulation of the electric field in the oral cavity during modulation of taste intensity by extraoral electrical stimulation

(in English) It is known that the enhancement and suppression of the sense of taste can be caused by electrical stimulation of the oral cavity with electrolyte taste substances in the oral cavity.It has been hypothesized that this effect is due to the electrophoretic migration of electrolytes that produce taste.However, the state of the migration of electrolytes and the electric field in the oral cavity cannot be estimated easily because the complex shape of the human head has different conductivity in each tissue.In this paper, the state of the electric field around the tongue was visualized using a finite element method simulation, and compared with the results of psychophysical experiments.The results support the hypothesis that changes in ion concentrations around the tongue alter perceived taste concentrations.
