Real-time measurement of wine taste using the electrical impedance method

(in English) The taste of wine is very complicated and difficult to evaluate, and the sensory evaluation is done by the sommelier, but in recent years it has been proposed to evaluate wine scientifically. In this study, we examined whether the electrical impedance method, which enables real-time measurement, can be applied as a method for evaluating the taste of wine and/or the type of grapes. As a result, it was found that it is possible to distinguish between dry and sweet wine, which is one of the flavors of wine, by evaluating them using the electrical impedance method.
